Easy Chinese Chicken Fried Rice

Ingredients

cups white rice (cold or leftover)

tablespoons olive oil, divided

pound chicken tenders

cup frozen peas and carrots

tablespoons soy sauce, divided

teaspoon sriracha

tablespoons diced green onions

Steps

    Heat a large non-stick skillet over medium heat. Add 1 tablespoon olive oil.

    Dice chicken into bite-sized pieces. Toss with ginger, salt, and pepper. Add to skillet and cook, stirring often, until browned and cooked through, about 7 minutes. Remove chicken to plate and set aside.

    Add 1 tablespoon olive oil to pan and stir in diced onion, garlic, and peas and carrots. Cook until onions are translucent and vegetables are warm, about 7 minutes. Remove vegetables to plate with chicken and set aside.

    Add remaining tablespoon of olive oil to pan over medium heat. Add rice and stir to coat. Cook, stirring occasionally, 5 minutes until rice is warmed through. Push rice to the side of the pan.

    Crack eggs into the empty section of the pan and drizzle with 1 teaspoon of soy sauce. Scramble the eggs until done.

    Stir eggs into the rice mixture, return chicken and vegetables to pan, top with remaining soy sauce and sriracha. Stir well, cooking for 5 more minutes.

    Remove from heat and sprinkle with green onions before serving.

An Italian's Classic Pizza Dough

  1. In a small bowl combine salt, honey, olive oil, and cool water.
  2. Mix well and set aside.
  3. In a separate bowl, combine warm water and yeast. Allow to proof for ten minutes.
  4. After proofing combine honey mixture and yeast in one large mixing bowl.
  5. Add flour, one cup at a time, into the combined liquid mixture. Dough is an art - depending on your paradigm you may want to work this with your hands, add a T of water if it is dry.
  6. Place dough ball on lightly floured surface and knead until smooth.
  7. Place dough in covered buttered (melted) bowl and allow dough to rest for 30 minutes. A slightly warmed oven (90 degree) is great.
  8. Divide into two equal sized dough balls.
  9. If using a pizza stone, place stone in oven and preheat oven to 450 for at least ten minutes.
  10. Roll out into two pies and add your favorite sauce and topping combinations.

All-American Pizza Crust

DIRECTIONS

  1. Preheat oven to 400°F.
  2. In a mixer bowl, combine 1 cup flour, yeast and salt; mix well.
  3. Combine water and oil; heat to 120 - 130 F, add to flour mixture.
  4. Blend at low speed until moistened; beat 3 minutes at medium speed. By hand, gradually stir in enough remaining flour to make a firm dough. Knead on floured surface 3 - 5 minutes.
  5. Divide dough into 2 parts. With well-floured or greased fingers, press each half into greased 12 or 14-inch pizza pan. Sprinkle 1/4 cup of your favorite shredded cheese over dough to prevent a soggy crust.
  6. Spread prepared pizza sauce on each pizza (approximately 3/4 cup of sauce per pizza).
  7. Add your favorite toppings. Cover with shredded cheese of your choice.
  8. Bake at 400°F for 25 - 30 minutes (see NOTE below) until edge is crisp and light golden brown and cheeses are melted. Serve immediately.
  9. Note: It may not take the full time. In my oven, it was about 20 minutes.

Classic American Pizza

  • Nonstick cooking spray
  • 1recipe Thin Crust Pizza Dough
  • 1/3cup pizza sauce
  • 1/23 1/2 ounce package pizza-style Canadian-style bacon or thinly sliced, cooked turkey pepperoni
  • 2cups thinly sliced fresh mushrooms
  • 1cup shredded reduced-fat mozzarella and/or 4-cheese Italian blend cheese
  • 2tablespoons thinly sliced green onion

Directions

  1. Preheat oven to 475 degrees F. Lightly coat a very large baking sheet with nonstick cooking spray. Roll out Thin Crust Pizza Dough according to directions to a 12x8-inch rectangle. Slide onto prepared baking sheet. Bake for 5 minutes. Remove from oven. If dough has puffed up during baking, prick it generously with the tines of a fork.
  2. Meanwhile, place sliced mushrooms in a small microwave-safe bowl. Microwave on 100% (high) power for 2 to 3 minutes or until mushrooms are tender, stirring once. Drain mushrooms. Spread partially baked crust with pizza sauce. Top with Canadian-style bacon or pepperoni and mushrooms. Sprinkle with cheese.
  3. Bake 9 to 11 minutes or until cheese is melted and crust is lightly browned. Remove from oven and sprinkle with green onion. Slice into 6 pieces. Serve immediately.
